Friday Foodie Affair: Eggs in a Basket



Eggs in a Basket
 

I made eggs in a basket for the first time last weekend. I had never tried them before but let me just tell you that I will absolutely be making them again! They are buttery, eggy goodness and I'm in love. I also came to the realization that if anyone ever asked what style eggs I like most I would be clueless as to what to say. I love so many different cooking methods and really I don't think I've met an egg I didn't love. Ok, that's not entirely true, I don't like when the whites aren't fully cooked. Runny egg whites just skeeve me out.

Aaaanyway, before making Eggs in a Basket, I read a few different versions on how to cook them. In the end I just decided to wing it. I figured I couldn't mess them up and if I did then I would just try again. Here's what I did...

Ingredients:

2 slices of white bread with holes in the middle. I didn't have any fancy cookie cutters handy so I just used a shot glass.

2 eggs

Butter

Directions:

Melt butter in the pan and place two slices of bread in the pan to soak up the butter. Pick up the pieces of bread, add more butter to the pan, then place the opposite side of the bread slices in the pan. Both sides should have butter on them.

Crack eggs into the center of the bread. Cook until the underside is nicely browned and the egg whites are mostly cooked.

Flip slices over and cook just long enough to brown the bread a little and finish cooking the egg whites. Add butter to the pan if necessary before flipping.

My Thoughts:

I've already professed my love for these so I will only add a couple quick thoughts.

I think I may try directly buttering the bread instead of adding the butter to the pan. That would simplify the process and hopefully not change the flavor too much.

I also broke one of the yolks so I'll be more careful next time...although it tastes good with or without runny yolks so you can't loose either way.

  1. Yes I hat it when the whites are runny! or when the inside of the omelet is runny!!! I have sent back many eggs in a diner to be re-cooked! When you find a diner that cooks the eggs the way you like them - keep going back there!

    I too am a huge fan of eggs! My favorite are farm fresh eggs that that have just been hatched! There is nothing like it! Store bought eggs are just not the same. I have been spoiled - my neighbors had chickens and gave me dozens of eggs! Then one of the kids I watched had chickens and gave me dozens of eggs! You see - I grew up on a chicken farm! Bet you didn't know that about me! My grandparents had a big two story barn and about 200 chickens! I used to take a wire basket and help gather the eggs. Then when Ashley was about two I got 25 chickens! I love this part of my life. It definitely made me not afraid of chickens (a lot of people are).

    OK as for my favorite way to eat eggs -
    If I am going out (and I love to go out for breakfast) I ALWAYS order an omelet! (and if it is runny on the inside, I send it back).
    If I am cooking eggs at home - I make Cheesy eggs! simply scrambled eggs cooked with lots of cheese! Ashley and Sean are coming this weekend and I am planning on making Cheesy eggs!

    1. A chicken farm! I had no idea! I was on an Amish farm a few times as a kid but I can't say that I've ever been on a chicken farm. I also don't think I've ever had fresh eggs so I'll have to take your word on their awesomeness.

      I'm usually too afraid to order omelets or over easy eggs when we're out because they're hardly ever cooked the way I like them. That's why I normally just make my own. I do want to eat out and try eggs benedict sometime, it just looks like it would be so tasty. Oh and I love cheesy scrambled eggs too but I usually add ketchup to it.

      Ps & BTW -You're welcome to type a novel on here anytime you want! And it was great seeing you and your house this week :) I'm looking forward to a pool party next year :-P

    2. Once you try farm fresh eggs you'll never go back to store bought again!
      Oh Eggs Benedict are awesome! But I order them without the ham of course. But you do have to be careful, once again sometimes the eggs can be runny :-(
