Friday Foodie Affair: Creamy Peanut Butter Fudge

For this week’s Friday Foodie Affair I have a very tasty recipe for you. Everyone loves it and requests it over and over…and over. I have made it so many times and I know the recipe well enough that I could probably make it in my sleep. Because I’m so familiar with it, I decided to add my tips along with the recipe.
 

Creamy Peanut Butter Fudge

Ingredients

4 cups White Sugar
1 cup Light Brown Sugar
½ cup butter
1 (12 oz) can Evaporated Milk
1 (16 oz) jar Peanut Butter
1 (7 oz) jar Marshmallow Crème
1 teaspoon Vanilla Extract

 
Instructions

Grease 9 x 13 baking dish.
I would suggest using a plastic or wood spoon with a long handle. I also recommend opening your vanilla, peanut butter, and marshmallow before you get started.

In medium saucepan, over medium heat, combine sugar, brown sugar, butter, and evaporated milk. Bring to a boil stirring constantly.
It will not start to boil until a couple of minutes after the butter has melted. If it doesn’t boil for a few minutes after that then bumping up the heat just a little should be the boost you need to get it moving along.
 
Boil for 7 minutes.
This is where that long spoon comes in handy because trust me when I say that this sh#t is like molten lava once it gets boiling!
I don’t know if it’s necessary but I continue to stir constantly during the 7 minutes of boiling.

Remove from heat; stir in marshmallow crème until well incorporated and melted. Stir in peanut butter and vanilla until smooth; spread in prepared pan.
This part needs to happen quickly because the slower you go, the faster your fudge will begin setting. If you get any on the stove (which I usually do), it can wait until you have the fudge in the pan but I definitely wouldn’t let it cool before cleaning it up.
Let cool before cutting into squares.
I recommend washing your spoon and pan right away, or at least soaking them in hot water. I can’t imagine it would be fun getting the fudge off once it hardens.


As you can see it goes fast!

My Thoughts
I’m not a huge peanut butter lover so what I like about this recipe is that the peanut butter flavor isn’t overpowering. I also like that it’s fairly easy to make; I usually won’t even look twice at a recipe if it has an off the charts difficulty level. This one is a lot of stirring but it’s worth it! The fudge is smooth and it just melts in your mouth.
